Our Weekend Get-Away

This weekend we had a great time visiting Phil’s brother and our Sister-in-law in LaVerkin (it’s close to St. George for those that don’t know!). We were so excited to see them and their new place. We have missed having them around and it was so great to catch up on old times! We took our Niece, Kiley, with us so she could enjoy a little vacation away from her brothers! Besides the fact that she is the sweetest little girl, Phil and I just can’t get enough of her. We love her so much.

On Friday my Father-in-law and mother-in-law came down from Las Vegas to visit for the afternoon. We took a short drive to a restaurant near Zions Park, it was beautiful! Kiley and my nephew Wil really enjoyed the animals!

On Saturday we took a drive through Kolab Canyon. It was breathtaking, and to think that this is right in their backyard was amazing. It was a very cool day outside but that didn’t stop us from stopping for a quick picture.

Of course there was much shopping involved while the boys were at Priesthood Session. Kara, Kiley, and I went into St. George and shopped til we dropped. After a few hours Kiley said, “I think I am done shopping now, I don’t think my legs can walk in anymore stores today!” Luckily for her, we were done at that point too! We are looking forward to another trip down to Rob and Kara’s very soon!

Sounds like fun! We were in Las Vegas for the weekend and the weather was perfect! I didn't even know Rob moved that direction - shows you what I know! See you on Saturday...I guess this is my RSVP. :)

You are such a good aunt. I wish my kids had one that would whisk (sp?) them away for a weekend. Beautiful fall shots!

Here's the artichoke dip recipe that you wanted:

1 can artichoke hearts (not marinated), drained and chopped
1 can diced green chilies
1 cup mayo
1 cup grated parmesan cheese (fresh)

Mix altogether in a casserole dish. Bake at 325 degrees for 20 mins. Serve with french bread, tortilla chips or crackers. Enjoy!

Also, we're finally having the "mini digital scrapbooking class" by the girl that does enrichment nights (Gina). It's October 25th, 7pm at her house in Centerville. If you're interested let me know and I'll send directions. (I'm trying to get a count too). So you know, I'm trying to not post as much about digi scrappin info on my site, but more on the yahoo group for those that are not interested in this obsession of mine. I've sent you a couple invitations. If you still want to join let me know and I'll send another one!

It worked!! I'm loving your long hair..so cute. We definitely need to have a reunion. I've been so out of touch with everyone from high school. It looks like you have a darling house! It was so fun to see what you've been up to, I'm glad you found me!

This will say it is from MPC, but it is really from Jenny. Mike taught me how to add friends so I finally got you on my blob. I really dont know how to do any of this.

Fun! Those are amazing pics. At the top of Kolob canyon there is some GREAT fishin...try it out sometime!

PS i copied that artichoke dip and I am really excited to make it.

Here is another really good dip:
1 avocado (diced)
1 mango (diced)
1 can chicken chunks (or diced cooked chicken, but the can is easier)
1 can white corn
1 can black beans
1 cup sugar
1 cup vinegar (you can use any kind but I like rice best)

Mix the sugar and vinegar until sugar is disolved and pour over all the other ingredients. Eat with chips or whatever! YUMMY!
